About our concept

Drawing inspiration from the enchanting annatto plant, ROUCOU showcases French-Japanese cuisine with an emphasis on artisanal cheese, complemented by an eclectic array of modern cocktails. Tucked in a quaint corner, the restaurant reveals an exclusive 8-seat omakase, offering an intimate atmosphere for guests to enjoy Jeremy Evrard’s unique interpretation of a curated cheese experience. Each dish evokes a fond memory in a chapter of his culinary journey, transporting patrons from his French roots to Kyoto, and back to Hong Kong for an authentic cheese adventure.

At Roucou, cheese and omakase unite in pure craft. Where terroir meets precision, and tradition meets artistry. Stripped of excess, flavour and integrity take center stage.

Our Cuisine

At ROUCOU, Jeremy honours the craft of traditional artisan cheese-making by showcasing distinctive varieties that narrate their origins, and the passionate producers behind them. The art of natural maturation imparts a remarkable depth to these cheeses, striking a harmonious balance between originality and refinement.

Our Artisan Cheese Story

Sourcing from the best, honouring traditions.

Cheesemaker Bernard Antony opened the former family farm in 1981. A small selection of farmhouse cheeses was starting to blossom in the Sundgau, an area in the south of Alsace where France, Switzerland and Germany meet.

In spring of 1993, Jeremy encountered the esteemed cheesemaker Bernard Antony. What began as a spark of curiosity, soon grew into a lifelong relationship with cheese.

Under Bernard’s mentorship, Jeremy delved to the world of traditional cheesemaking. With unwavering generosity, Bernard shared generations of secret recipes and maturation techniques without reservation, thus fostering a deep bond with Jeremy. Their three-decade connection inspired Jeremy to honour the traditions of cheese making, with a mission of introducing  artisan cheese to the world.

Now we strive to bring you the rare, exquisite taste of fine raw-milk cheeses, from the Sundgau region of Alsace to Hong Kong.
